  2. On a baking sheet, spread the diced zucchini, bell peppers, halved cherry tomatoes, and sliced red onion. Drizzle with olive oil and season with salt, pepper, Italian seasoning, and minced garlic. Toss to coat.
  3. Roast the vegetables in the preheated oven for 20-25 minutes until tender and slightly caramelized.
  4. While roasting, cook the orzo according to package instructions; drain when done.
  5. In a large mixing bowl, combine roasted vegetables with cooked orzo. Gently fold in crumbled feta cheese (if using) and chopped fresh basil.
