  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 cup ricotta cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon zest
  • ½ cup honey
  • ½ teaspoon chili flakes
  • 1 teaspoon apple cider vinegar
  • Chopped pistachios for garnish
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the carrots with olive oil, garlic powder, smoked paprika, sea salt, and black pepper until well coated. Spread them evenly on a baking tray.
  3. Roast the carrots for 20-25 minutes until golden brown and tender, flipping halfway through.
  4. Meanwhile, in a blender or food processor, combine ricotta cheese, heavy cream, lemon zest, salt, and pepper. Blend until smooth and creamy; chill in the refrigerator.
  5. In a small saucepan over low heat, warm honey and stir in chili flakes; steep for about 12 minutes before adding apple cider vinegar and letting it cool slightly.
  6. To serve, spread the whipped ricotta on a plate, layer the roasted carrots on top, drizzle with hot honey, and garnish with chopped pistachios and fresh herbs.
