  • 2 tablespoons butter (for syrup)

Instructions

  1. In a large bowl, whisk together ricotta, egg yolks, milk, orange juice, orange zest, and vanilla until smooth.
  2. In another bowl, mix flour, baking powder, baking soda, sugar, and salt. Gradually add this mixture to the ricotta blend and stir gently.
  3. In a separate small bowl, whisk the egg whites until frothy and fold into the batter carefully.
  4. Heat a non-stick skillet over medium heat and melt butter. Pour about 1/3 cup of batter into the skillet; cook until bubbles form on top before flipping to golden brown.
  5. For the orange syrup, combine sugar and water in a saucepan over medium heat until dissolved. Add orange zest and juice; simmer for about 5 minutes before thickening with cornstarch slurry.
  6. Serve pancakes warm drizzled with orange syrup.
