  • 4 minced garlic cloves (divided)

Instructions

  1. Preheat oven to 400°F.
  2. In a baking dish, mix cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until slightly burst. Let cool.
  3. In a blender, combine ricotta, 1 minced garlic clove, 1 tablespoon olive oil, fresh basil, salt, and pepper until smooth. Refrigerate until needed.
  4. Slice bread into ½-inch pieces. Brush with garlic olive oil mixture and season with salt and pepper. Bake at 400°F for 10-12 minutes until toasted.
