  • 1 lb mascarpone cheese
  • 1 cup whipping cream (cold)
  • 2 cups raspberry curd (cooled or room temperature)
  • 2 packs ladyfingers
  • ½ cup granulated sugar
  • 2 lemons (juiced, grated zest optional)
  • 4 large eggs
  • 4 large egg yolks

  • 1 teaspoon pure vanilla extract
  • Lemon slices (for decorating)
  • Fresh raspberries (for decorating)

Instructions

  1. Combine raspberries with lemon juice. Blend until smooth if desired; set aside.
  2. Whip cold cream to stiff peaks. In another bowl, beat mascarpone cheese with sugar and vanilla until smooth. Gently fold whipped cream into the mascarpone mixture.
