  • 240 g All-purpose flour
  • 100 g Powdered sugar
  • 40 g Shredded almonds
  • 120 g Cold butter, cubed
  • 1 Large egg
  • 300 g Raspberries (fresh or frozen)
  • 180 g Mangos, cubed
  • 180 g Sugar
  • 2 tbsp Lemon juice
  • 3 Egg yolks
  • 3 tbsp Cornstarch

Instructions

  1. Prepare the crust by mixing flour, powdered sugar, shredded almonds, and salt. Blend in cold butter until crumbly. Add egg and vanilla extract; form into a disc and chill.
  2. Roll out the chilled dough and fit it into a tart pan. Blind bake for 25 minutes until golden brown.
  3. For the filling, cook raspberries, mangoes, sugar, lemon juice, egg yolks, cornstarch, salt, and butter in a saucepan until thickened.
  4. Pour the filling into the cooled crust and let it set before refrigerating for at least two hours.
  5. Garnish with fresh raspberries and mango slices before serving.
