  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, then add minced garlic, celery, and diced carrot. Cook until tender.
  2. Pour in vegetable broth and rinsed quinoa; stir well and bring to a boil.
  3. Reduce heat to low, then add corn kernels, coconut milk, smoked paprika, thyme, salt, and pepper. Mix thoroughly.
  4. Let simmer for about 20 minutes until quinoa is cooked through, stirring occasionally.
