  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons of dough onto the baking sheet about 2 inches apart.
  8. Top each dough ball with extra marshmallows, chocolate chips, or graham cracker pieces.
  9. Bake for 12 to 14 minutes until edges are golden but centers remain soft.
  10. Cool on the baking sheet before transferring to a wire rack.
