  • 1 ¼ cups dark brown sugar
  • ¾ cup white granulated sugar
  • 1 cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 2 eggs
  • ½ teaspoon salt
  • 2 cups all purpose flour
  • ½ teaspoon baking powder
  • 1 tablespoon pumpkin spice seasoning
  • 12 ounces vegan marshmallows fluff
  • ½ cup semi-sweet or milk chocolate melting chips

Instructions

  1. Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, melt the unsalted butter until browned and nutty.
  3. Whisk in dark brown sugar, white sugar, and pumpkin puree until smooth.
  4. Stir in vanilla extract and eggs until well combined.
  5. Add flour, baking powder, and pumpkin spice seasoning; mix until smooth.
  6. Spread half of the batter in the prepared dish.
  7. Layer dollops of vegan marshmallow fluff over the batter evenly.
  8. Pour the remaining batter over the fluff layer and spread it out gently.
  9. Bake for 55 minutes or until a toothpick comes out clean.
  10. Cool completely before drizzling with melted chocolate and slicing into squares.
