  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13 inch baking dish.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well combined.
  3. Press half of the mixture into the baking dish as the crust.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Sprinkle remaining crumble mixture on top and add optional walnuts for extra crunch.
  7. Bake for 30–35 minutes until golden brown and set.
  8. Allow to cool before slicing into bars and serving.
