  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel and dice the pumpkin into bite-sized cubes.
  3. Boil the gnocchi in water according to package instructions until they float; drain well.
  4. In a mixing bowl, combine cooked gnocchi, diced pumpkin, blue cheese or goat cheese, vegetable stock, single dairy cream, and half of the mozzarella or cheddar cheese. Stir gently.
  5. Pour the mixture into a greased baking dish, top with remaining cheese and chopped sage leaves.
  6. Bake for about 25 minutes until golden brown.
  7. In the last five minutes, sprinkle chopped pecans on top for extra crunch.
