  • 1 large egg (at room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin or pumpkin puree
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • ½ tablespoon water
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini donut pan.
  2. In a medium bowl, whisk together all-purpose flour, oat flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, mix the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until well blended.
  4. Combine the wet ingredients into the dry mixture and whisk until just combined for a thick batter.
  5. Fill each cavity of the donut pan halfway using a piping bag.
  6. Bake for 6-7 minutes or until donuts spring back when touched.
  7. Transfer to a wire rack to cool completely before glazing.
  8. In a small bowl, mix powdered sugar with maple syrup, dark corn syrup, water, and ground cinnamon to create the glaze. Dip cooled donuts into the glaze.
