  • 1 1/2 tbsp. olive oil
  • 1/2 tsp. salt
  • 1/3 tsp. pepper
  • 1/2 tbsp. taco seasoning
  • 1/2 tbsp. oregano
  • 1 lb. green beans
  • 4 garlic cloves, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the potatoes, then combine in a mixing bowl with olive oil, taco seasoning, oregano, salt, and pepper.
  3. Spread seasoned potatoes evenly on a baking sheet and roast for 15 minutes.
  4. In the same bowl (no need to wash), add green beans, remaining olive oil, minced garlic, and additional salt; mix well.
  5. After 15 minutes of roasting potatoes, add green beans to the baking sheet and gently stir.
  6. Return to the oven for an additional 20-30 minutes until both vegetables are tender.
