  • 200 ml apple vinegar
  • 2 tbsp brown sugar
  • Zest of orange
  • 1 cinnamon stick
  • 2 whole cloves
  • 1 wheel brie (200250 g)
  • 1 sheet puff pastry
  • 1 beaten egg (for egg wash)
  • Flaky salt or chopped rosemary (optional)

Instructions

  1. Poach the pear by simmering it in a mix of apple vinegar, brown sugar, orange zest, cinnamon stick, and cloves for 20-25 minutes until tender. Cool in the liquid.
  2. Cut the brie in half horizontally and place the cooled pear upright on one half. Cover with the other half.
  3. Roll out puff pastry on a floured surface and wrap it around the brie and pear completely. Seal edges well.
  4. Place seam-side down on a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with salt or rosemary if desired.
  5. Bake at 200°C (392°F) for 20-25 minutes until golden brown. Allow to cool for 5 minutes before serving.
