Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups granulated sugar
  • 6 large eggs, room temperature
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, well drained (reserve juice for glaze)
  • 1 cup powdered sugar
  • 23 tablespoons reserved pineapple juice
  • 1 teaspoon lemon juice (optional, for brightness)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt pan.
  2. In a large mixing bowl, cream together unsalted butter, cream cheese, and granulated sugar until light and fluffy (about 4-5 minutes). Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add to the butter mixture until just combined. Stir in vanilla extract and well-drained crushed pineapple.
  4. Pour the batter into the prepared bundt pan and smooth the top.
  5. Bake for 80-90 minutes or until a toothpick comes out clean from the center. Cool in the pan for 15 minutes before transferring to a wire rack.
  6. For the glaze, whisk together powdered sugar with reserved pineapple juice and optional lemon juice until smooth. Drizzle over the cooled cake.
