  • 1 can (15 oz) pineapple chunks, drained (reserve ¼ cup juice)
  • 2 cups cooked white rice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp ground ginger

Instructions

  1. Prep your ingredients: Dice chicken and bell pepper; drain pineapple chunks reserving some juice.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper and cook for 6 to 8 minutes until browned and cooked through.
  3. Stir in the diced bell pepper and cook for another 2 to 3 minutes until slightly tender.
  4. Add the drained pineapple chunks and cook for an additional 2 minutes.
  5. In a small bowl, whisk together reserved pineapple juice, soy sauce, honey, garlic powder, and ground ginger. Pour over the chicken and vegetables in the skillet.
  6. Stir well to coat everything evenly in sauce and simmer uncovered for about 4 to 5 minutes until the sauce thickens slightly.
  7. Serve over cooked white rice, garnished with green onions or sesame seeds if desired.
