  • 1 lb chicken breast (or thighs)
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1.5 cups cooked rice (white, brown, or jasmine)
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped

Instructions

  1. Pat dry the chicken and cut it into bite-sized pieces. Heat oil in a large skillet over medium-high heat; sauté the chicken for 5-7 minutes until browned and cooked through. Remove from skillet.
  2. In the same skillet, sauté garlic for about 30 seconds. Add soy sauce, pineapple juice, honey, and rice vinegar; stir to combine.
  3. Mix cornstarch with water in a small bowl; add to the skillet while stirring. Simmer for 2-3 minutes until thickened.
  4. Return chicken to the skillet and add pineapple chunks, bell pepper, and green onions. Stir well and cook for another 2-3 minutes until vegetables are tender but crisp.
  5. Serve over cooked rice and enjoy.
