  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • Olive oil for cooking
  • 2 cups jasmine rice
  • 4 cups water
  • Fresh cilantro for garnish

Instructions

  1. Rinse 2 cups of jasmine rice under cold water until clear. In a pot, combine the rinsed rice with 4 cups of water, bring to a boil, then reduce heat and simmer covered for about 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Sauté minced garlic and grated ginger until fragrant (about 30 seconds).
  3. Add chicken pieces to the skillet; season with salt and pepper. Cook until browned (5-7 minutes).
  4. Incorporate sliced onions and bell peppers; cook until softened (3-4 minutes).
  5. Stir in fresh pineapple chunks, soy sauce, honey, and sriracha; mix well and heat through for another 5 minutes.
