  • ½ cup soy sauce

  • 1 tbsp rice vinegar
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped

Instructions

  1. In a skillet over medium heat, sauté the cubed chicken in olive oil until browned and cooked through (about 5–7 minutes). Remove chicken from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds. Pour in soy sauce, pineapple juice, honey (or brown sugar), and rice vinegar. Simmer for 2–3 minutes.
  3. Mix cornstarch with water to form a slurry; stir into the sauce until it thickens (around 1 minute).
  4. Add the cooked chicken back to the skillet along with pineapple chunks and diced red bell pepper; stir to combine.
  5. Mix in the cooked rice and heat through until everything is well combined (another couple of minutes).
  6. Serve hot, garnished with chopped green onions and optional sesame seeds or chili flakes.
