  • 1 cup fresh pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until golden brown and fully cooked. Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  3. Stir in the cubed pineapple and cook for about 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring to a boil then reduce heat to low; cover and simmer for 18-20 minutes or until rice is cooked.
  5. Return the cooked chicken to the skillet; mix well to combine flavors. Heat through before serving.
  6. Garnish with sliced green onions and sesame seeds.
