  • 1 oz almonds (1/4 cup), finely ground
  • 2 oz powdered sugar (1/2 cup)
  • 1/4 tsp salt
  • 5 oz unsalted butter (cold)
  • 1 large egg yolk
  • 2.5 oz unsalted butter
  • 2.5 oz powdered sugar (2/3 cup)
  • 1 large egg
  • 2.5 oz finely ground almonds (2/3 cup)
  • 1 tbsp all-purpose flour
  • Pinch of salt
  • 1/4 tsp almond extract
  • 10 Fuyu persimmons
  • 1/4 cup honey

Instructions

  1. Prepare the tart dough by mixing flour, ground almonds, powdered sugar, and salt in a food processor. Add cold butter and pulse until crumbly. Incorporate the egg yolk and pulse until combined.
  2. Chill the dough for 30 minutes wrapped in plastic wrap.
  3. For the almond cream, beat butter and powdered sugar until smooth. Mix in an egg, ground almonds, flour, salt, and almond extract until creamy.
  4. Preheat your oven to 350°F (175°C). Roll out the chilled dough and fit it into tart pans.
  5. Fill each crust with almond cream evenly.
  6. Thinly slice persimmons and arrange them on top of the almond cream.
  7. Bake for about 45 minutes or until golden brown.
  8. Drizzle warm tarts with honey before serving.
