  • 3 red bell peppers
  • 1 jalapeño pepper
  • 3 garlic cloves
  • 1 red onion
  • 4 tablespoons olive oil
  • 4 tablespoons lemon juice
  • 2 lbs chicken thighs (skin-on, bone-in)
  • Fresh parsley

Instructions

  1. In a mixing bowl, combine sliced bell peppers, jalapeño, garlic, onion, olive oil, lemon juice, salt, pepper, smoked paprika, oregano, thyme, vinegar, honey or brown sugar (if using), parsley, and red pepper flakes. Mix well.
  2. Place chicken thighs in a resealable bag or shallow dish and pour half of the marinade over them. Seal or cover and refrigerate for at least 30 minutes (up to overnight).
  3. Preheat grill or oven to medium-high heat. Remove chicken from marinade and discard used marinade.
  4. Grill chicken skin-side down for about 6–8 minutes per side until cooked through (juices run clear) or bake on a lined baking sheet for about 25 minutes until reaching an internal temperature of 165°F.
  5. Let rest for a few minutes before serving. Drizzle reserved marinade over chicken if desired.
