  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. Whisk together flour, baking powder, and salt in a medium bowl.
  2. In a large bowl, cream softened butter and sugar until fluffy. Beat in egg, vanilla extract, and peppermint extract.
  3. Gradually mix dry ingredients into wet ingredients until just combined; divide dough in half.
  4. Color one half with red gel food coloring and chill both halves wrapped in plastic for 30 minutes.
  5. Roll each half into rectangles; layer and roll into a log shape. Chill again for 2 hours.
  6. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  7. Slice the chilled log into rounds and coat with coarse sugar or crushed peppermint candies before baking for 8-10 minutes.
