  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar, packed
  • 10 TBSP unsalted butter, melted
  • 1 1/2 cups brown sugar, packed
  • 2 tsp ground cinnamon
  • 1 1/2 cups heavy cream
  • 2 1/2 cups pecans, chopped into larger pieces
  • 32 oz cream cheese, room temperature
  • 1 cup sour cream, room temperature
  • 3/4 cup heavy cream, room temperature
  • 1 tsp pure vanilla extract
  • 4 large eggs, room temperature
  • 1 egg yolk, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, brown sugar, and melted butter. Press firmly into the bottom of a springform pan.
  2. In another bowl, beat cream cheese and brown sugar until smooth. Gradually add sour cream, heavy cream, vanilla extract, eggs, and egg yolk; mix until fully combined.
  3. Gently fold in ground cinnamon and chopped pecans into the cheesecake mixture. Pour half over the crust; dollop remaining filling on top and swirl for a marbled effect.
  4. Bake for about 75 minutes or until set. Cool at room temperature before refrigerating for at least four hours or overnight.
  5. Slice chilled cheesecake and garnish with additional chopped pecans if desired before serving.
