Ingredients

Scale
  • 2 cups + 2 Tbsp all-purpose flour
  • 1/3 cup brown sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cubed and cold
  • 1 egg
  • 1/4 cup heavy whipping cream
  • 1/4 cup sour cream
  • 2 tsp vanilla extract
  • 1/2 cup fresh peaches, diced
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 13 Tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, brown sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, combine egg, heavy whipping cream, sour cream, and vanilla extract; whisk until smooth.
  5. Fold in diced peaches and then combine with dry ingredients until just blended.
  6. Turn dough onto a floured surface; knead gently and shape into a circle about 1-inch thick. Cut into wedges or rounds.
  7. Place on the prepared baking sheet, brush tops with extra heavy whipping cream, and bake for about 16 minutes or until golden brown.
  8. While baking, mix powdered sugar with vanilla extract and enough heavy whipping cream for desired glaze consistency.
  9. Drizzle glaze over cooled scones before serving.
