  • 1 cup hot water
  • ½ cup cold water
  • 5.1 ounces instant vanilla pudding
  • 8 ounces whipped topping (thawed)
  • 45 ounces sliced peaches in 100% juice (3, 15-ounce cans, drained and chopped)
  • 4 cups mini vegan marshmallows

Instructions

  1. In a large mixing bowl, dissolve the peach vegan gelatin mix in hot water. Stir until fully dissolved.
  2. Add cold water and refrigerate for 15 minutes.
  3. Whisk in instant vanilla pudding until well combined and return to the refrigerator for another 15 minutes to thicken slightly.
  4. Gently fold in the whipped topping, peach chunks, and mini marshmallows until evenly distributed.
  5. Chill for at least 2-4 hours or overnight for best results before serving.
