  • 1 plum, sliced
  • ½ cup blueberries
  • 1 ½ tablespoons coconut sugar
  • 2 tablespoons almond meal or almond flour (optional)
  • 1 large egg, lightly whisked
  • ½ cup sliced almonds
  • 1 tablespoon honey (optional)

Instructions

  1. In a food processor, pulse together flour and salt. Add cold butter cubes and pulse until crumbly.
  2. Gradually add ice-cold water until dough forms. Shape into a disk, wrap in plastic, and chill for at least 1 hour.
  3. Preheat oven to 375°F (190°C). Roll out dough into a circle on a floured surface.
  4. Combine sliced peaches, plum, and blueberries with coconut sugar; set aside.
  5. Place rolled dough on parchment-lined baking sheet, sprinkle almond meal if using, and mound fruit mixture in the center.
  6. Fold edges of dough over fruit while pleating to create a rustic edge.
  7. Brush crust with whisked egg wash and sprinkle with sliced almonds.
  8. Bake for 50-55 minutes until golden brown. Cool slightly before serving.
