  • 4 ripe peaches (peeled and cubed)
  • 3 ribs celery (chopped)
  • 1/2 cup green onion (chopped)
  • 1/2 cup sweet red bell pepper (chopped)
  • 1 peach (peeled and quartered)
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon fresh basil (chopped)
  • 2 1/2 tablespoons vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery seed
  • 2 teaspoons sugar (to taste)
  • 1/8 teaspoon coarse ground pepper
  • 1/3 cup mayonnaise

Instructions

  1. In a bowl, combine shredded chicken, cubed peaches, celery, green onion, and red bell pepper.
  2. For the dressing, blend quartered peach, lemon juice, olive oil, basil, vinegar, salt, celery seed, sugar, coarse ground pepper, and mayonnaise until smooth.
  3. Pour the dressing over the chicken mixture and stir gently until well coated.
  4. Cover and refrigerate for at least one hour to allow flavors to meld before serving.
