  • 1 pound ground beef
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 1 cup dry ditalini pasta
  • 15 ounces red kidney beans
  • 15 ounces cannellini beans
  • Fresh parsley for garnish
  • 3 tablespoons olive oil (divided)
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 1 tablespoon Italian Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add ground beef and cook until browned; then drain excess fat.
  2. Add remaining olive oil to the pot and sauté diced onion, carrots, and celery until softened.
  3. Stir in minced garlic and cook until fragrant.
  4. Combine chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, ground beef, and ditalini into the pot.
  5. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until pasta is tender.
  6. Stir in both types of beans and heat through for a few minutes.
  7. Season with salt and pepper as needed; garnish with fresh parsley before serving.
