  • 2 tablespoons olive oil
  • 1 ½ cups chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic
  • 3 cans tomato sauce
  • 2 cans low-sodium chicken broth
  • 1 can diced tomatoes
  • 1 cup dry ditalini pasta
  • 1 can dark red kidney beans
  • 1 can great Northern beans
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned; drain excess fat.
  2. In the same pot, sauté onion, carrots, and celery for about 6 minutes until soft. Stir in garlic and cook for an additional minute.
  3. Add tomato sauce, diced tomatoes, chicken broth, water, sugar, and dried herbs to the pot. Return the browned beef; season with salt and pepper. Bring to a boil then reduce heat; cover and simmer for 15–20 minutes.
  4. Cook ditalini pasta separately until just shy of al dente; drain well.
  5. Add cooked pasta along with kidney beans and great Northern beans to the soup. Let simmer for another 2 minutes before serving.
