  • 1 medium onion (diced)
  • 2 medium carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 can (15 oz cannellini beans, drained)
  • 1 can (15 oz kidney beans, drained)
  • 1 can (28 oz crushed tomatoes)
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup water
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup ditalini pasta
  • Fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, carrots, and celery for 5–7 minutes until softened. Stir in minced garlic and cook for another minute.
  2. Add cannellini beans, kidney beans, crushed tomatoes, broth, water, oregano, basil, salt, and pepper to the pot. Mix well and bring to a simmer.
  3. Once simmering, add ditalini pasta and cook for 8–10 minutes until al dente.
  4. Taste the soup and adjust seasonings if necessary.
  5. Serve hot in bowls garnished with fresh parsley and optional grated Parmesan.
