  • 1 cup dry ditalini pasta
  • 1 pound extra lean ground beef
  • 1 large onion (about 1½ cups)
  • 2 medium carrots (peeled and diced)
  • 3 stalks celery (diced)
  • 1 tablespoon minced garlic
  • 1 (28-ounce) can tomato sauce
  • 4 cups chicken broth
  • 1 (15-ounce) can diced tomatoes
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 (15-ounce can) dark red kidney beans (drained and rinsed)
  • 1 (15-ounce can) great northern beans (drained and rinsed)
  • Salt and pepper to taste

Instructions

  1. In a skillet or crock pot with a browning function, heat olive oil over medium heat. Cook ground beef with onions, carrots, and celery until the beef is no longer pink and vegetables are tender.
  2. In a microwave-safe bowl, toss dry ditalini with olive oil and microwave on low power for about 3 to 5 minutes until blistered.
  3. Transfer the browned mixture to the slow cooker. Add toasted pasta, tomato sauce, chicken broth, diced tomatoes, herbs, and beans. Stir well to combine.
  4. Cover and cook on low for 2 to 3 hours until pasta is al dente. Season with salt and pepper before serving.
