  • 7 store-bought oatmeal cookies
  • 28 ounce packages cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup white chocolate melts
  • 18 ounce container Cool Whip, thawed & divided
  • 1 cup diced strawberries
  • 1 cup blueberries
  • 7 whole strawberries
  • Red and blue sprinkles

Instructions

  1. Crush the oatmeal cookies into fine crumbs and layer them evenly in the bottom of small serving cups.
  2. In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract; beat until creamy.
  3. Melt white chocolate according to package directions and dip whole strawberries into the melted chocolate; let them set on wax paper.
  4. Mix remaining melted chocolate into the cheesecake mixture and gently fold in half of the Cool Whip.
  5. Pipe a layer of cheesecake over the cookie base in each cup, then top with mixed berries followed by another layer of cheesecake.
  6. Finish each parfait by piping additional Cool Whip on top and adding a chocolate-dipped strawberry as decoration.
