  • 1 salmon fillet (about 150g)
  • 1 large egg
  • 1 cup fresh spinach leaves
  • 1 cup sliced mushrooms
  • Diced avocado
  • 1 tbsp olive oil (divided)
  • Salt & freshly cracked black pepper

Instructions

  1. Heat half a tablespoon of olive oil in a skillet over medium heat. Season the salmon fillet with salt and pepper. Cook skin-side down for 3–4 minutes; flip and cook for another 2–3 minutes until cooked through.
  2. In a small pan, heat a drizzle of oil over medium heat. Crack in the egg and cook sunny-side up until the whites are set but the yolk remains runny.
  3. In the same skillet as the salmon, add sliced mushrooms and sauté until golden brown.
  4. Quickly sauté the spinach in a drizzle of olive oil until just wilted.
  5. Plate the salmon alongside the sunny egg, sautéed mushrooms, spinach, and diced avocado. Sprinkle with extra black pepper before serving.
