- 1 lb pasta (fusilli or rotini recommended)
- 2 cups Italian dressing
- 1 packet dry Italian dressing mix
- 1 8-oz bottle sun-dried tomatoes
- 1 can pitted black olives, drained
- 1 pint grape tomatoes, diced
- 1 English cucumber, diced
- 1 red onion, diced
- Cook pasta in salted water according to package instructions until al dente. Drain well (do not rinse) and transfer to a large mixing bowl.
- While the pasta is still warm, stir in the Italian dressing and dry seasoning mix until evenly coated.
- Drain and chop the sun-dried tomatoes; add them to the pasta mixture and cover tightly. Refrigerate overnight.
- When ready to serve, add black olives, grape tomatoes, cucumber, and red onion to the pasta mixture. Mix well and enjoy.
