  • 1 tbsp olive oil
  • 1 red onion
  • 3 large cloves garlic
  • 1 carrot, diced
  • 1 leek (green ends included), diced
  • 1 tsp dried thyme
  • 120 g orzo pasta
  • 1.5 l vegetable stock (dissolved from stock cube)
  • Fresh dill (for garnish)
  • Salt & pepper to taste
  • Juice of 1/2 lemon
  • Extra virgin olive oil (to garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add finely chopped onion and garlic, along with diced carrot and leek. Season with salt and pepper, and sweat down for about 6 minutes until softened.
  2. Dissolve the stock cube in hot water to create vegetable stock.
  3. Pour the vegetable stock into the pot and add orzo pasta and dried thyme. Let it simmer for approximately 12 minutes until the orzo is al dente.
  4. Taste and adjust seasoning if necessary with additional salt, pepper, lemon juice, and freshly chopped dill.
  5. Serve hot, garnished with a drizzle of extra virgin olive oil and more fresh dill.
