  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch cake tin by greasing or lining it.
  2. In a bowl, mix flour, baking powder, cardamom, and salt; set aside.
  3. Cream butter and brown sugar until fluffy. Add eggs one at a time, then stir in vanilla, orange zest, and juice.
  4. Fold in chopped dates into the wet mixture.
  5. Gradually combine dry ingredients with wet mixture until just incorporated.
  6. Pour batter into prepared tin and bake for about 40–45 minutes or until a toothpick comes out clean.
  7. While baking, warm honey and orange juice together in a saucepan for drizzle.
  8. Drizzle the honey mixture over the warm cake when done; let cool before serving.
