  • Zest of 1 large orange

  • 1/2 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by buttering it or lining it with muffin liners.
  2. In a mixing bowl, whisk together sugar, eggs, vegetable oil, milk, orange juice, and orange zest until well combined.
  3. In another bowl, mix the dry ingredients: ground cardamom, flour, baking powder, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet mixture until no dry bits remain.
  5. Pour the batter into the prepared muffin tins, filling each about two-thirds full. Sprinkle with sparkling sugar if desired.
