  • 1 medium sweet onion, diced
  • 4 medium carrots, diced
  • 12 oz mushrooms, diced
  • 4 celery ribs, diced
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tbs Italian herb seasoning
  • salt and pepper to taste
  • 2 tbs tomato paste
  • 1/2 cup dry apple vinegar
  • 7 cups low sodium vegetable or chicken broth
  • 1½ lb cheese tortellini
  • 1/2 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 3 handfuls kale, chopped

Instructions

  1. In a large pot, heat olive oil on high. Add diced carrots and onion, sautéing for 3 minutes.
  2. Stir in mushrooms and celery; continue sautéing for a few more minutes before adding minced garlic for 30 seconds until fragrant.
  3. Season with paprika, Italian herb seasoning, salt, and pepper; mix in tomato paste thoroughly.
  4. Pour in apple vinegar and broth; bring to a boil, then cover and simmer for 20 minutes until carrots are tender.
  5. Add cheese tortellini and parmesan cheese; cook for an additional 5 minutes until tortellini is tender.
  6. Gently stir in heavy cream and chopped kale; serve hot with optional garnishes.
