  • 2 cups (240g) graham cracker crumbs
  • ½ cup (113g) unsalted butter
  • 16 ounces (452g) full-fat cream cheese at room temperature
  • ¼ cup (48g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 cup (236ml) heavy whipping cream
  • ½ cup (65g) powdered sugar
  • 2 lbs (32oz) fresh strawberries, washed and dried
  • 2 tablespoons strawberry Jello mix

Instructions

  1. Prepare the crust by mixing graham cracker crumbs with melted butter and pressing it into a 9×13 inch baking dish.
  2. Make the cheesecake filling by beating room-temperature cream cheese with sugar, lemon juice, and vanilla until smooth. In another bowl, whip heavy cream with powdered sugar until stiff peaks form and gently fold it into the cream cheese mixture.
  3. Assemble the dessert by layering half of the cheesecake filling over the crust, followed by sliced strawberries and strawberry Jello mix. Add the remaining cheesecake filling on top.
  4. Finish with whipped cream by whipping more heavy cream with powdered sugar and spreading it over the top layer.
  5. Chill in the refrigerator for at least 4 hours before serving.
