  • 6 oz. dark chocolate (chopped)
  • 2 teaspoons coconut oil
  • ½ cup all-natural, creamy peanut butter
  • 1 teaspoon coconut oil
  • ¼ cup mini chocolate chips

Instructions

  1. Line a muffin pan with paper liners or use a silicone muffin pan.
  2. In a bowl, mix oats, honey, peanut butter, and chopped peanuts until well combined. Press the mixture firmly into each muffin cup.
  3. Melt dark chocolate and coconut oil in a microwave-safe bowl until smooth.
  4. Spoon melted chocolate onto each oat layer and freeze for about 5 minutes.
  5. Mix additional peanut butter and coconut oil, then spread on top of the chocolate layer.
  6. Sprinkle mini chocolate chips on top before freezing for at least 30 minutes to set completely.
