  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar for cinnamon swirl
  • 1 tablespoon cinnamon for cinnamon swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In one bowl, mix shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and spices.
  4. Gradually combine the dry ingredients with the wet mixture until just blended.
  5. For the cinnamon swirl mixture, mix granulated sugar with cinnamon in a small bowl.
  6. Layer half of the batter in the prepared pan and sprinkle half of the cinnamon-sugar mixture on top; add remaining batter and finish with the rest of the swirl mixture.
  7. Use a knife to create swirls through the batter.
  8. Bake for 60–65 minutes or until golden; check doneness with a toothpick.
  9. Allow cooling before slicing.
