  • 1 tablespoon instant coffee powder
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs (whisked)
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour (spooned & leveled)
  • 12 teaspoons instant coffee powder (for frosting)
  • 1 tablespoon boiling water (for frosting)
  • 1/2 cup unsalted butter (softened to room temperature, for frosting)
  • 1 1/22 cups powdered sugar (sifted, for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/4 teaspoon salt (for frosting)
  • 1 tablespoon whipping cream (if needed, for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
  2. Melt dark chocolate and unsalted butter in a bowl using short microwave intervals until smooth.
  3. Mix in instant coffee powder, sugar, and vanilla extract; then add whisked eggs one at a time.
  4. Gently fold in flour until just combined.
  5. Pour batter into the prepared pan and bake for 25 minutes or until a toothpick comes out with moist crumbs.
  6. For frosting, dissolve instant coffee in boiling water; beat softened butter and powdered sugar until fluffy. Add dissolved coffee, vanilla, and salt; mix until smooth.
