  • 4 tablespoons granulated sugar
  • ½ teaspoon fine sea salt
  • 12 tablespoons cold unsalted butter, cut into pieces
  • 3 tablespoons milk
  • ½ cup homemade vanilla pudding
  • 2 cups diced assorted fresh fruit (such as berries, kiwi, grapes, cherries, peaches)
  • 2 tablespoons apricot preserves (optional)

Instructions

  1. In a food processor, mix flour, sugar, salt, and butter until it resembles coarse meal.
  2. Gradually add milk until the dough forms a ball; chill for at least 30 minutes.
  3. Preheat oven to 350°F (175°C).
  4. Scoop dough into a mini muffin tin; press evenly across bottoms and up edges.
  5. Bake for 13-16 minutes or until golden brown; cool on a wire rack.
  6. Fill each cooled shell with vanilla pudding and top with diced fresh fruit.
  7. Optionally glaze with melted apricot preserves for added shine.
