  • 1/2 tsp Vanilla extract
  • 1/2 cup Powdered sugar
  • 1/4 tsp Kosher salt
  • 2 cups Flour
  • 1 3/4 cups Milk
  • 2 tsp Vanilla extract
  • 5 Egg yolks
  • 1/4 tsp Kosher salt
  • 1/2 cup Granulated sugar
  • 3 tbsp Cornstarch
  • Strawberries
  • Blueberries
  • 1 tbsp Apricot jam
  • 1/2 tsp Water

Instructions

  1. Make the tart dough by combining flour, powdered sugar, and salt in a food processor. Add cold butter until pea-sized crumbs form.
  2. Mix in the egg and vanilla extract until a dough forms. Chill for at least an hour.
  3. Roll out the dough into rounds and fit them into mini tart pans. Freeze for 20 minutes.
  4. Preheat oven to 350°F (180°C) and bake tart shells until golden brown (15-20 minutes). Let cool.
  5. Prepare pastry cream by whisking together milk, sugar, cornstarch, and egg yolks over medium heat until thickened.
  6. Fill cooled tart shells with pastry cream and top with fresh fruit mixed with apricot jam.
