  • 115 g unsalted butter (melted or room temp)
  • 135 g light brown soft sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat your oven to 190ºC (170ºC fan) and line a 9×9 inch square baking tray with parchment paper.
  2. In a mixing bowl, combine melted butter, light brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, stirring until well mixed.
  4. Gradually mix in plain flour, cornflour, bicarbonate of soda, and salt until just combined.
  5. Gently fold in milk chocolate chips and most of the mini eggs.
  6. Press the mixture into the lined baking tray and top with remaining mini eggs.
  7. Bake for 18-22 minutes or until the top looks dry but is still soft in the center.
  8. Allow to cool completely before slicing into bars.
