  • 1 1/4 cups unsalted butter (softened)
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 large egg yolk (slightly beaten)
  • 28 ounces sweetened condensed milk (two 14-ounce cans)
  • 1 teaspoon light corn syrup
  • 6 ounces dark chocolate (60% cacao, coarsely chopped)
  • Sea salt (for finishing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Gradually add flour and salt; mix until combined. Stir in the beaten egg yolk until a dough forms. Press evenly into the bottom of the prepared pan.
  3. Bake the shortbread for about 20 minutes or until lightly golden brown. Set aside to cool.
  4. For the caramel filling, combine sweetened condensed milk, light corn syrup, and remaining butter in a saucepan over medium heat. Stir continuously until melted and slightly thickened (about 5-7 minutes). Pour over the cooled shortbread layer.
  5. Melt dark chocolate in a clean saucepan over low heat until smooth; pour over caramel layer and spread evenly.
  6. Sprinkle sea salt on top before it sets. Allow to cool completely at room temperature or refrigerate until firm.
  7. Once set, lift out using parchment paper edges and cut into squares or rectangles.
