  • 1/2 lb lean ground beef
  • 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove seeds.
  2. Place squash halves in a baking dish and bake for 50-60 minutes or until fork-tender. Let cool for 10 minutes, then shred the flesh into strands with a fork.
  3. In a skillet over medium heat, brown the ground beef for about 7-10 minutes. Drain any excess grease and stir in the marinara sauce; simmer for an additional 2-3 minutes.
  4. In a mixing bowl, combine the ricotta cheese, Italian seasoning, salt, pepper, Parmesan cheese, and 1 cup of mozzarella.
  5. Mix half of the meat sauce into each squash half. Spread the ricotta mixture on top and cover with remaining meat sauce and mozzarella.
  6. Return to the oven to bake for another 10-20 minutes until bubbly and golden brown.
