  • ½ red chili pepper
  • 2 cloves garlic

  • 1 can (10 oz) Piquillo peppers or roasted red peppers
  • 2 cans (14 oz each) chopped tomatoes
  • ½ cup coconut milk
  • Sea salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the chopped red chili pepper, minced garlic, and diced onion. Sauté for about two minutes until fragrant.
  2. Stir in the Piquillo peppers, chopped tomatoes, ground cumin, coconut milk, sea salt, and black pepper. Let simmer for about 10 to 15 minutes.
  3. Blend the soup until smooth using an immersion blender or regular blender. Adjust consistency with water or more coconut milk if desired.
