  • 4 garlic cloves (minced)
  • 2 cups rice (basmati, jasmine, or long grain)
  • 1 cup water
  • 2 cups chicken or vegetable broth
  • 1 teaspoon turmeric
  • Salt to taste
  • 3 tablespoons parsley (chopped)
  • Zest and juice of 1 lemon

Instructions

  1. In a large saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 2 minutes until softened. Stir in minced garlic and cook for an additional 2 minutes until fragrant.
  2. Sprinkle in the turmeric and salt, mixing thoroughly to combine.
  3. Add the rice to the saucepan, stirring continuously until it becomes mostly translucent.
  4. Pour in the broth and water. Cover with a lid and bring to a simmer. Once simmering, reduce the heat to low.
  5. Cook for about 12 minutes or until all the liquid has evaporated.
  6. Remove from heat but keep covered for an additional 10 minutes to allow for fluffy rice.
  7. Finally, stir in lemon zest, lemon juice, and chopped parsley before serving.
